Where do they hold Social Security disability and SSI disability hearings?

Your disability hearing will be held by the Social Security Office of Disability Adjudication and Review. Typically, these offices are not at the Social Security Center where you applied for your benefits, nor are they at the county courthouse where other cases are tried. Social Security rents out buildings and they build buildings specifically for ODAR to hear cases. So, your hearing will be at the offices of Social Security Adjudication and Review, and it'll be somewhere in the jurisdiction within 100 miles of where you live.
